so this video should be called how to use a machine to sharpen kitchen knives. This wasn’t what i was looking for.

where can you purchase that grinder/sharpener?
if he was frustrated by a free hand stone, he should have bought a guide for it or, ya know, any of the massive selection of manual aids and systems out there, spyderco sharpmaker, a dmt with one of theyre own guides, or hell a couple quarters…
I know. When I was first introduced to this tool I had the same reaction. However, I was assured by the inventor, who was himself frustrated by trying to hold a uniform angle with a freehand whetstone, that his sharpener would not remove excessive material … and he had lab results to prove it. I’ve used this sharpener almost daily in my own kitchen for nearly ten years and the profiles on my knives look as good as the day I bought them.
What a horrible thing to do to good kitchen knives. Sure, it will make them sharp, but it will also remove much more material than necessary each time, causing your knives to wear out far faster than they would if properly sharpened. As in, you can ruin a good knife this way in a matter of months, as opposed to not being able to do it in your lifetime with a whetstone. This is how chef’s knives get those big dips in the heels of their blades. Just say no to grinding wheels.
